Assuming you are comfortable modifying the XML -
1) exit the game
2) make a backup copy of your config folder
3) open ..\7 Days To Die\Data\Config\items.xml
4) find the weapon you are interested in, i.e. gunMGT1AK47
5) find the line in that weapon's xml block that looks as follows
<property name="CrosshairOnAim" value="true"/>
6) change the value to false
7) save items.xml
8 restart the game
This is a direct xml edit. it will be overwritten the next time you update the game version or verify files. You can make an xpath mod which is a seperate file which will be permanent until deleted. And xpath mods have a lower chance of allowing a small typo to screw up your entire game installation. There are xpath tutorials available.
