The main differences you'll come across is if they're Feral or Radiated
You can pick out a Feral zombie with it having yellow-ish eyes, and Radiated zombies are basically green glowing.
These variants have more health than their Base Health (BH) counterparts to give an approximate (≈) value of Feral Health (FH) and Radiated Health (RH) see below:
FH ≈ BH * 1.9
RH ≈ BH * 3.6 ≈ FH * 1.9
e.g. a Biker has 280 BH, 352 FH and 1010 RH
Radiated zombies also regenerate health though this can be temporarily mitigated with the Rad Remover Mod which can be added to essentially anything that hits, cuts or shoots at zombies.
With most zombies the safest bet is to keep them at a distance and when doing your quests always keep your back to an exit, even with a hefty arsenal and armour numbers can overwhelm you if you get backed into a corner.
I usually use bladed weapons if I'm armoured up (Tier 6 Machete / Spear) if they're available as they inflict a bleeding effect causing damage over time if you need to switch target, this can be enhanced by a Serrated Blade Mod. Once again if availability allows, carry a firearm with some ammo
There are "normal" zombies. They look like homeless folks hanging around the bus station. They are fairly easy to kill, except in very early game when you have no decent weapons and no stamina to run away. Standoff weapons such as bows and crossbows are best. Use a hit-and-run strategy to deal with them, and avoid getting surrounded by large groups of them.
Cops are a special case - they will vomit on you, which is icky and bad for your health. Either avoid them, or take them out very quickly. There are Crawler zombies, which - you guessed it - crawl on the ground. Watch where you step. (Also applies to snakes, see below). There are also "Spider" zombies, which can jump fairly long distances. Annoying and dangerous. And then there are the "Screamers" which look vaguely like Lily Munster (look it up if you're too young to remember that T.V. show) and are attracted to heat given off by active workstations and fires. They will emit hideous screams that will draw hordes of other zombies to the area. Easily killed, but they must be dealt with quickly before they draw a crowd.
There are "feral" zombies. These have red, glowing eyes. They move fast and they are mean. If you see them early game, run away. Get away from them, or get into a high position and snipe them with standoff weapons. They take a lot more killing than the normal zombies.
There are "radiated" zombies. These are near-boss zombies that glow green. They are fast and mean. Their health regenerates, so you must kill them quickly. Find, buy, or craft a Rad Remover mod for your primary weapon to help deal with them.
For all these types, standoff weapons are the best choice until you have a high game stage and good enough armor to protect yourself. When dealing with one or two at a time, I like to use arrows or crossbow bolts to weaken them, then finish them off with a melee weapon.
Once you reach higher game stages and have good weapons and armor, all these types are easily dealt with unless you are caught by a large horde or surrounded in a POI. Then all bets are off.
There are also animal zombie types - vultures, bears, and dire wolves - not to mention the "normal" animals that will attack - mountain lions, bears, coyotes, and snakes. Again, all of these are easily dealt with except in early game when you are slow and weak. Bears and Dire Wolves are especially dangerous. In the early game, focus on building up running and stamina percs. This will allow you to use melee weapons, since it usually takes some time to get decent firearms and enough ammo to make a difference.
Then you have the tougher zombies, these are bikers, Big Momma, and overweight vacationer and soldiers. These guys just bash in the head. for soldiers aim for the neck because of their helmets, dangerous in packs, they take multiple hits to go down and can deliver a good amount of damage, dangerous if feral which firearms or sneak attacking for that first hit work best/ sledge hammers to knock them on the ground/get up higher than them and rain blows down, parkour 2 is critical in this game.
Then you have special zombies like the Cop who is tough and spits acid at you, can also explode, his hits do damage and that acid can kill you quick if there are multiple cops. You also have what are called Wights, these are always feral and you can tell when they are walking around by their feet slapping the floor, extremely dangerous and can take a ton of hits/kill you quickly. High ground and firearms are the best way to deal with both cops and wights, run away from a wight if you are not prepared with at least a handgun, not the pipe guns.
Spiders (the ones that hiss and crawl on all fours) can jump extremely far and high, they are dangerous in groups, a handgun is the best solution.
You also have Demolishers, they looked like beefed up soldiers with a button that is green on their chest, if you hit it they will go into a quick rapid beeping before exploding, this explosion can damage your base and heavily damage/kill you/any other zombies around. It is best if you see a demolisher coming to shoot that button if it is far away or shoot it in the head.
Other creatures will be animals/zombie animals, bears, mountain lions, hogs, coyotes are dangerous IN THAT ORDER, guns for bears and mountain lions, arrows for hogs and coyotes or just smash them with a strong melee weapon. You will also come across vultures that will dive bomb you from the sky, annoying but not a real threat unless multiple of them.
Dire wolf, the dire wolf is one of the strongest enemies in the game. if you see one it is best to go the other direction unless you have a solid firearm (a good pump shotty or machinegun) and good armor. out in the open they will destroy you very fast, if there are multiple, get to cover, these things are very fast and their attacks can kill you in a couple hits. They are best avoided unless you can bottle neck them in a doorway using hatches, but always have an escape plan.
Every zombie can be radiated, these are tougher than the feral version of themselves and can deal a ton of damage, their health also regenerates which the rad remover mod for weapons is critical to have. These will appear (depending on your difficulty) a lot in the burnt forest biome, past day 7 and you will only see more and more as you progress. radiated wights are even more a nightmare then their feral brothers. Lots of ammo and heavy weapons to deal with any of the radiated zombies.
I probably missed a bunch but that was a pretty quick breakdown what you can expect, I also left out on purpose some so you get the chance to experience them for yourself.
