Deer are more common around dawn and dusk. Which is surprisingly realistic for 7DTD.
Snakes seem to occur mainly in fixed locations. Some POIs. An arrangement of hay bales and some rubbish next to a crossroads.
Rabbits are good at hiding, so if you do happen to be near one in the countryside you might well not see it unless it moves.
If you're set on hunting animals, there's a perk for it. It shows animals on the compass part of the HUD when you crouch, if any are within range. I forget what it's called because I never hunt animals so I've never used it.
I would recommend deer hunting or firing some chicken if you find one. Rabbits, well, you should practice your accuracy skill as they are small and quick but that should be better with your guns scoped crossbows or stealth approach. have your pick
if you come across with snakes, that's your lucky day. they are easy to kill and can be seen anywhere. Snakes will always hiss and attack you. If you hear them, stop moving and look around so you won't get hurt and can kill them immediately. For me, snakes are likely to appear at night, so ears open.
