After every game exit, I do a manual copy of the save file with a date. Its just good policy.
Though I haven't experienced it, I've heard of vehicles disappearing and map chunk resets.
Instead of running offline mode, a better way to keep steam from updating the game is to copy the game folder to another location and run it from there. Just copy ...\steamapps\common\7 Days To Die to somewhere your user has read and write access to. Then create a shortcut on your desktop to the exe file.
You can get back what you had with the console.
Press F1 to open the console.
Type 'cm' without the quotes and press return to enable creative mode.
Press F1 to close console.
Now you can press U to open the creative menu and find all the items you lost. You can also grab books and magazines to read. Then turn off creative mode by typing cm in the console again, or just restart the game.
For the levels you can use the giveselfxp command. Open the console again with F1 and then enter
giveselfxp xxxxxxx
where xxx is some number of points. Keep doing this until you're back to your level.
This will give you back your unlock points also except for those initial 4 points at the beginning. You can get those back with the console command
givequest test_turnin2
and then just speak to a trader. One of the rewards is 5 skill points, so you get 1 free one for all your trouble.
Oh, and make a backup of your save before you do all this in case of mistakes.
