If you don't mean textures, I'm not sure I understand what you are asking. Do you just mean you want to make cobblestone or concrete?
I mean changing the wood design all together, A wooden frame is chipboard, When I press L2 three times with my stone axe it turns into wooden planks. Those wooden planks look good for floorboards, I need a plain wooden look for the walls and another plain wooden look and lighter for the ceilings. Chipboard walls looks wrong.

Yeah, that doesn't clarify anything so much as repeat what you said. :)
There are 3 qualities to blocks (all of them, not just wood) that you might want to change : Shape, texture, and material.
There is a context menu to craft different shapes when selecting a base shape. Paint is used to change the texture. And upgrading with a tool or replacing the block can be used to change the material. (wood, stone, concrete, metal).

Wield a paintbrush in your hand. Have some paint in your inventory. Hold the reload key on the block surface you want to paint to select from the radial context menu.
You will likely have other questions as you go along. Which means you may just want to google "how to paint in 7dtd". There are good videos for beginners that would probably be faster for you than playing 20 questions here.
You can also try "how to change shapes in 7dtd" and "how to upgrade blocks". Etc, etc.
Thanks, I didn't realise I had to buy the paintbrush and paint. I thought it was added in a paint option.
Like most other things, you can craft a paintbrush, and paint. The paint brush requires grass and wood I think? (don't remember exactly) Paint requires oil and some plants.
You can also find both in loot, but it's easier to just craft them when you want them. Scrapping a color mod also gives a small amount of paint.
