That said, it's a safer bet -especially since you're 'kinda new' to the game- to get the leather from the non-hostile sources, such as the couches. :)
due to outstanding level of skill, you best source of leather is merchant, ever poor coaches probably too hard.
other than that, any animal will give you leather. the dogs are a great source when they come hunting in packs.
On a side note to the OP as I am sure Jimmy knows this, but if you use a wrench on these instead of scrapping, they give some mechanical parts and a little iron in addition to the leather. I usually collect them until I have a wrench
The game will often spawn a wolf or two in the forest at night, so if you're somewhere a few blocks high (so they can't reach) that doesn't have a path up to you that the wolf can follow, then you can crouch up there and try to hit it with the bow.
Turning the in-game Brightness option (pause the game, graphic options, top/left tab) will help you see a little better at night. And you'll usually hear a quiet dog-whining sound when a wolf is spawned somewhere nearby...so it's a good idea to crouch/sneak or build your way upward to get a little safer.
The bow does ~3.5X more damage when you're crouched/sneaking and it's quiet enough at night that staying crouched can sometimes result in the world not realizing where you are even after you've shot it once.
Keeping 2 or 3 loaded blunderbuss on your belt (or building them) can also help in emergencies.
Once you're prepared enough, many aggressive animals feel more like meat+leather "deliveries".
Except bear...which can often handle a full clip and then some. :(
