then press enter, then either ESC or F1 to close the F1 console.
Now you'll have some extra options on the right side of the screen when you pause the game (press ESC).
One of those checkmark boxes you can uncheck is block gravity....might be called "Physics Active" or something.
Turning that off will make the blocks stay floating after you knock out what's connecting them to the ground just like MineCraft.
The DM-mode and any changes you make to that list on the right will reset back to default whenever you quit out of the game and go back in later.
Floating blocks WILL remain floating until you try to connect more blocks to them or jump on top (so at least things won't all come crashing down when you reload into the game).
Won't work in multiplayer unless you're the host though.
Not sure if there's a registry or XML trick to make it always default to no-gravity though.
