What specific folder are you talking about?
To play the older versions you have to start the game directly from the 7 days to die .exe where steam installs the game as the launcher doesn't work for the older versions.
Steam>steamapps>common>7 days to die then select the 7 days to die.exe (not the launcher one)
WAIT, I tried this method, it doesn’t work either, and if you don’t understand, I meant that the game itself opens, but when creating a new world and launching it, the console pops up with an error
Have you tried pressing esc? because you can get past them errors when a map is loading and play fine, I've had them errors many times.
Nothing happens, I pressed esc and the console just went away and that’s it
You should be able to then select start game or whatever it says, to just normally enter the map, once the console error command is out of the way.
Also give it a min or two for the new map to load, so the enter game/start game pops up.
This console comes out during LOADING, that is, on the loading screen where there is nothing lol

Semi-unrelated: I remember I stopped trying to replay A10 because I'd get errors like that trying to run them. The old versions did character profiles differently I think and (in my case) if you have multiple installs/versions of the game (not just the single Steam install) it didn't like flipping back and forth, even running from the .exe vs. steam.
But if you tried a seriously clean install of the old version (no old folder/file remaining so no conflicts) and that didn't work, no idea, outside of a registry entry causing an issue perhaps.
Registry entries do cause problems. You should clear out the data when switching versions.
Hit the Play button, open the Launcher, choose the Tools tab and then Clean Game Data.
