Zombies don't see the world the way you do, They dont see spikes as traps, they just see it as a block- an obstacle. If you place your spikes ON ground level, they'll see it as a block to jump on top of, If you stack your spikes 2-3 tall, they see it as a wall to either break through or navigate around.
Which is what I'm betting you did- You stacked your spikes 2-3 tall thinking the zombies will use them all up trying to get on the staircase, instead they saw it as a wall to walk around TO the staircase that has a path up.
For base building, Make sure you're paying attention to Mass vs Support of the Horizontal-Horizontal connection point; For example, Wood blocks have a Support of I think 40, and a Mass of 5; So you can at most build out 8 blocks from a wooden connection point; If you instead use Cobblestone, which has a mass of 10, you can only extend out 4 blocks. You cannot put more mass than the connection point can support.
Also there's a limit of 15 contiguous block lengths from the nearest connection to a vertical support pillar, regardless of how much support there is- Concrete for example has a support of 120, Using Wood you might think you can extend out 24 blocks; But you can't, once you hit 15, the 15th will either auto-collapse, or it won't support any weight in most situations, including that of the player.

Read it over, and watch the video linked- The video is from A15, so it's a bit old, the mass and max load values presented within are likely inconsistent with current alpha values. But the actual Mechanics of structural integrity haven't changed since the videos creation, so it is still absolutely a great resource for understanding building in 7DTD.
There's also a bit of important info in my followup reply(s?) within that thread. Make sure to check those too. :)
If you're positive that you're not making mistakes and things you're building are collapsing for no reason, Need way more info.
And the base build... Yeah, I know theoretical the boundaries how far ahead you can build... Can't really describe it but it feels off. Maybe I was just to stupid this time but I had some strange experiences with base build lately... But hey, it's experimental server!
