Mumble not working
I do not see the option to turn on mumble in the 7 Days to Die audio menu like seen on:

Is there a trick to get this to work, would be cool for immersion, i know it from VR and it feels great to hear where the other person stands from the positional audio.

This is a feature being added in a21. It does not exist in the current version. That page was only just created in January.
