Problem solved: game crash every few minutes
If your game crashed every few minutes try this.

Go to your Steam library "SteamLibrary\steamapps\common\7 Days To Die"
right click on 7DaysToDie -> properties ->compatibility.
Check for "run as administrator" and " Disable full screen optimization"
has both a hook its fine.
We move on, below you see "change high dpi settings" put the hook insite the botom box and press "ok" back at the window before press "apply" -> "ok".

Do the same with 7dLauncher. (same folder)

That fixes my crashes. Hope it helps someone out there.

Or just, you know don't install games into program files location in 2023. Seriously, people could avoid a metric ton of issues by installing all games to root C:\ (C:\Games\Steam, C:\Games\GOG whatever) and adding exceptions to Windows Defender and all 3rd party software for that location. File permission / other permission in Windows can cause issues with some games, especially with security software. The last time i had to use "run as administrator" was with Windows XP...

Dont have any third party software at this location.

I know it sounds stupid with "running as administrador" but it works for my problem.

Ok. It doesn't sound stupid, just sounded like a file permission issue.

Have to say. It not solved any more. Today i got a couple of crashes but with longer time distance. around 3-4 per hour. Very anoying but i think i cant do much more.

I turned the reflexions off. No crashes since i did it. Played over 2h without a crash, before the games crashed every few minutes.

Makes sense. I have noticed that in Alpha 21 exp the texture filtering, reflections, AO and SS reflections are noticeably more heavy settings compared to A20.7. Lighting is also noticeably more heavy on the GPU. Maybe you were pushing the GPU just a bit too hard, and it crashed because of that. Or maybe it's because incomplete/broken driver install. Hard to say, would have to know a bit more about your system.

Well, since i don't have crashes at all i'm all out of ideas. Only thing that comes to mind is if overclocking, you might be unstable. Alphas/Betas and Early Access games in general push hardware in unexpected ways, and can easily push a somewhat stable (in some conditions) over the edge. This has been the case much too often with early access titles.
