I tried retrying and it worked once a few months ago. Yup, 5 days, no joking.
go for a files validation first.
Are you really really sure you didn't do any of that 'lets hate epic' stuff? Nothing in hosts file?
If no than imho go nuclear - start from C:\Users\usernamme\AppData\Roaming\7DaysToDie
I tried: validating the files, unchecking anti cheat in launcher, uninstalling and re-installing the game, removing Epic from PC.
What is 'let's hate epic' stuff and going nuclear?

Still getting Epic Online Services Login error.
I keep EAC disabled too.
Open the install location for 7d2d. Inside that folder (7d2d) is a file called 'platfroms.cfg.' Open it with a text editor like notepad. It should look like this;
platform=Steam
crossplatform=EOS
serverplatforms=Steam,XBL,
So, you can delete that 'EOS' from the line; crossplatform=EOS
Then save and close the file.
Try launching and loading your game again to see if bypassing the EOS server check resolves the issue.
Edit: If it does... you may need to delete the player.log files and then do the 'verify files' option in steam library--7d2d--properties--local files. The ones I'm talking about are (by default) in;
C:\users\ your user name \Appdata\LocalLow\The fun pimps\7d2d
There's a player.log and player-prev.log file... delete both.
Afterward, run the game again and double check it's working. You could then edit that platforms.cfg file again and add the EOS back in. Test again and see if still working.

OP - I unfortunately cant help you. It looks like a problem on your side.
Normally you just click retry. But second screenshot is weird. Sorry.
Odd that it would be on my side, since it's an Epic error. It works sometimes, mostly not. If it were on my side, why would it work sometimes?
Also odd to get an Epic error when I paid Steam.
TFP is pressing hard for cross platform and EOS is one of the foundations being used to help make this happen in the future. A20 was the first time it was introduced and they are still working out some of the bugs since it is new. In the meantime, some players who have issues may have to make some changes themselves on their end until they can iron out the details on their end.
Now, as far as your issue. You said you haven't been able to play for the last 5 days and you play with steam. The game updated to A20.7 3 weeks ago and your screenshots show you are still running A20.6. By default, steam should have updated the game for you automatically by now but it clearly hasn't. So either, you changed the beta settings for the game to keep A20.6 or there's a problem with your connection to Steam.
Is there anything else I can change on my end to make it work?

and
C:\users\ your user name \Appdata\Roaming\7d2d\Generated Worlds\ should be a map folder named after the county / territory your playing in.
Then do an uninstall. And, go through your PC, deleting all the 7d2d folders that get left on your system. This includes the ones in your users folder... in that previous mentioned...
C:\users\ your user name \Appdata\Roaming\7d2d folder
and
C:\users\ your user name \Appdata\LocalLow\The Fun Pimps folder.
At this point, your system should be clean of all 7d2d related stuff with exception of your set aside game save and map. Do a PC restart for good measure. Open Windows firewall and reset it to defaults. This will eliminate whatever firewall rules may have been created for 7d2d. Run steam, select 7d2d and do the install. Afterward, right click the 7d2d game in the library game list, choose properties--local files--and do the 'verify files' option. Did it find files it needed to re-download? If so, you may need to open your Anti-Virus--threat protection--and add the games exe's into the 'Exceptions' list. They are found by default in;
C:\Program Files(x86) \Steam\Steamapps\Common\7d2d
There is; 7d2d.exe, 7d2d launcher.exe, and EAC.exe
The EAC.exe is only needed if you plan to join MP servers that require EAC to be enabled.
Alternatively, you could just add the entire 7d2d folder to the exceptions list. Either way works. But, now you'll want to go back and do that 'Verify Files' option again.
The next thing you'll do is run the 7d2d launcher.exe, switch to 'tools' tab, click 'Clean...' selecting all the checkboxes, and clean the old data. This resets the keys in your Windows Registry to correct defaults for your current installation of 7d2d. Now, switch back to the main tab, disable EAC + Analytics, and select 'Run and save....' That will launch the game and you should get a popup about Windows firewall--choose 'Allow' 7d2d. Then, you can go through settings to optimize graphics and keybinds. Close it out, copy / move your 7d2d\Saves and map files back into your users appropriate folders. Run and test the game.
Side Note*
Some things that can interfere with internet service that I see commonly are people using VPN's with their Internet service.
And / Or using HyperV network adapters--which is MS's virtual network adapters. Open Network settings and see if you have these 'virtual' adapters. Disabling them so your system only uses the actual physical NIC can help alleviate synchronization issues.
Also, be sure your NIC isn't using power saving features like 'Green Ethernet' and that the Windows Power profile is not set to a power saving setting that maybe powering down the cpu and / or NIC. Those random power lowering events can cause internet service issues.
