ObjectQuality affects the render-distance of most objects (including zombies to some extent and trees) as well as the distance where some objects change from high-quality to low-quality models/LODs.
ViewDistance changes the distance where buildings (and terrain, I think) will change from their low-quality "impostors" to their actual block-by-block accurate selves.
TerrainQuality (when adjusted from main menu) affects how far the distant terrain renders VS being invisible...though this distance is often too far to see unless you're cheat-mode flying and turn fog off. TerrainQuality LOW (and lower) will also simplify ground textures while MEDIUM (and higher) switches to a higher-quality ground texture. This is why you can set TerrainQuality to MEDIUM (from the main menu) and get the best appearance while still helping CPU performance a little by having ridiculously far-away terrain turn invisible where you usually can't see it anyway.
GrassDistance only affects grass and a few small plants distance rendering. Some small plants are affected by ObjectQuality instead though...I think Aloe is one of these.
