The tutorial by creator is old and can damage the original installation of 7DTD and is invasive into vanilla save files and can corrupt them.
You should not use original creator's video guide if you want a correct setup of the mod.

It is more flexible than Workshop and more convenient than doing it manually. You can install complete overhauls or build your own using modlets.
It keeps separate copies of the game for each mod without touching your vanilla Steam version. The only limitation is your storage space.
If you want to use Steam overlay and screenshots, you can add the 7D2DModLauncher to Steam as a Non-Steam game.
