The only exception you may have to make would be the water filters since they seem pretty much required now.
I think it started going downhill for me when TFP started leaning more towards traders and quests. And the further they leaned into it, the more tedious it became. The changes to the skill system are also to blame too since it became a 'spend points to win' concept a few updates back. Both of these major core changes took the fun out of the game for me since you were almost forced to play a certain way instead of letting you play the game like you want to.
I'm not going to go into every details since this topic has been beat to death, but that's the basic jist of when I found the game start become boring.
There will never be a 1.0 release of this game.
Here, you'll just talk with other players and some moderators. None of which can help fix your described problem.
Btw, I think it would be a good idea if the world generator could create the kind of map you want, or if some mod could do it. The traders are definitely the biggest game changer. I'm sure some vet players would choose to try and play without them.
It was all fine up until a16 or a17. My favorite game. My community server was exploding with 30+ players. After a16, rarely more than 10 at peak times, Now, rarely more than 4 players, apart from the first week after a new patch.
I would have declared a16 final, and then started on "7dtd2".

A17. Since some things have improved but its not what I want in a game anymore.
Also everything you said you like to do, you can still do, live like a nomad, moving from place to place, I get where you're coming from though, everyone is different, the update you will like the most or might have already played it is around a9 a10, no vehicles, never ending random gen maps, I would join a public server and start walking 100k + in one direction for weeks going places no one would ever go, it was fun though, I remember the further you go the more you could see weird spawns, like whole towns under water, literally.. also one server made a scuba mask mod, just for the crazy spawns.
Some things I do miss from the past, but overall the game is better now in every department.
It's a very repetitive game so except if you particularly like the gameplay loop, it's not worth it to keep playing and visiting the same POIs all over again.
The fact is that, it's not a sandbox game, not anymore. So everytime people say "then don't use X thing, don't go X place, don't do that", the game isn't designed to play like that.
What annoys me the most in this game is zombies having the exact same location each time you go to a POI.
