The hoe existed for farming up until A18 dropped. Part of a long process of tilling plots with fertilizer that took a long time to make in cement mixers. Tilling fields with fertilizer is what made seeds yields more when harvesting, versus spending points today. But harvesting was grabbing the crop by hand.
And why are you punching crops? Knife is much faster. Always has been.
You don't harvest crops with a hoe, though. A sickle would be a more appropriate tool (and only for some crops, e.g. you wouldn't harvest blueberries with a sickle). Bare hands is more realistic for harvesting some crops. Not by punching, but making a picking animation would be far more work to do it right. If it's even possible with the code they have.
I generally use a knife for harvesting. It's faster than punching and sort of appropriate in a way, a bit. Knives were general purpose tools. It's the best match we have and it's better than using a hoe for harvesting.
Increased yield comes from the Living off the Land perk. Which doesn't make a lot of sense, but it makes more sense than getting increased yield from harvesting with a hoe. LotL could be a stand-in for knowledge of farming. Although that wouldn't explain a higher yield from wild plants.
Fertiliser and irrigation would make more sense for increased yield, but that's probably not going to happen without mods. Farming is really only for roleplaying in vanilla. I only do it for base decoration. I think it looks appropriate.
I do want farming to be changed though. I would rather have much longer grow times and no nerf to seeds. And I think farming perks should significantly increase grow times. Maybe have a perk that allows the crafting of a fertilizer.
The game used to have fertilizer that could be put on dirt blocks:)
The farm plot is a simplified abstraction of the old farming system. The hoe, prepared fertilizer from the mixer was replaced with the effort of crafting the farm plot and incorporating nitrate and rotten flesh (both fertilizer).
For realism, I would prefer adding a chance a seed fails, modified by LotL...
