There have been changes I don't like (the game is still in alpha(*), so it has changed a lot) but there are thousands of mods for it so that doesn't matter as much as it would have done without mods.
Then there are the overhaul mods that significantly change the game. I hardly ever play vanilla. After the first couple of hundred hours, almost all of my playtime has been modded, usually overhaul mods.
7DTD is and always has been primarily a single player game. Co-op MP works well enough and some people like playing that way, but it's an additional feature rather than the core.
* Ignore the relabelling of alpha 22 to 1.0. It was solely misdirection for business purposes. It's still an alpha. It still says it's an alpha on the loading screen. Because it is. Alpha 1.3 is the latest version, which would be alpha 22.3 in the older (and more honest) numbering system.
That said, on lower difficulty levels and with reduced 7th day Blood Moon hordes, it's doable.
the range of customization options in the base game alone could give you 100's of hours, then there are several high quality conversion mods
if you are looking for a story-based SP experience, this isn't it
Singleplayer it's harder and you feel the atmosphere much more (as you are alone).
Multiplayer it's the classic coop feeling as well as more rpg character you might like.
Though note this is a sandbox game with the good and the bad things about this. Also note that there are various configurations, also config files, modes and helper programs to adjust the game even more to what you like.
I have only played single player since the "1.0" launch and it's perfectly fine to play alone. You can adjust quite a few settings to fine tune the overall difficulty of the game. This goes beyond just adjusting the difficulty setting which only affects damage to you, damage to zombies, and zombie "rage" chance. You can generally make the game as difficult or as easy as you want it to be due to being able to adjust zombie block damage, player block damage, zombie speeds, loot density, blood moon frequency (you can even shut it off) and a bunch of other variables.
Now... I hate a lot of the game's systems. I think they've botched many things including how progression works, how armour works, how farming and crafting works, and even how some of the looting is magically adjusted based on what perks you have and even what armour you are wearing but it's still fun to explore buildings and kill zombies. The game is looking better than ever these days.
