Got achievement of surviving one bloodmoon with that...
1, First thing you need to set up is a base, ignore quests, the rewards are just a waste of time. By base, I mean somewhere 2nd/3rd floor, at least, destroy all stairs, install a ladder.
2. Don't get hit. If you do get infected, then break tree stumps, they have a chance to drop honey, which cures infection. (You should make this one of your first tasks)
3. You find better tools, by looting. Nobody can forge metal, when dropped in the middle of nowhere.
4. Stamina is fine (except for gaming logic, running more than 20 metres wears you out)
5. How else would you prefer things to unlock, except for reading/learn while doing - the "learn while doing" is covered by speccing a particular line. Yeah, it's not perfect, but in an "RPG" what else would you suggest?
6. "ahem" get good. I only play solo/offline and get on just fine, pick a speciality, and stick to it. You don't have to cover all bases, you just need to specialise. pour your points into whatever line you fancy then INT to 4 (engineering and vehicles) and fortitude to 5 (farming) and you're all set. You can mix and match later in the game, when you have the points, but concentrating on AGI (pistols, bows, knives) or STR (shotgun/clubs) first is always a good start.
It's supposed to be hard, I remember my very first night, cowering in a tree house, wolf wandering about. It was horrible.
Bottom line is, it's a survival game, it's supposed to be challenging. You're supposed to think about survival, and you're supposed to be punished for failure.
If, by Massive Multi-Player, you mean 8-ish Players working in co-co mode, then "No".
It is single-player, or co-op for small groups hosting their own dedicated or P2P server.

I hear Stardew Valley can be Very Challenging to the "right player".

6) Pretty sure I've gotten my feet wet from earlier alphas. Getting used to this is another matter.
Then, perhaps, it's not the game for you. It's supposed to be hard, though it isn't actually that hard, once you work out the core mechanics. It's punishing, if you go in unprepared.
I have long thought that the core world generation could be transferred to all sorts of "world" games, and surprised some random leaching AAA publisher hasn't hoovered them up, Sure POIS are limited, but they add more and more each patch, the generation itself is spot on.
Unfortunately, now you're forced to loot everywhere just to get a heads up on several skills through the idiotic magazines and booklets.
Meanwhile I go through several bloodmoons with stone/iron tools and pipe weapons. The fact you get an option to make stone age armor and otherwise with "legendary parts" is downright stupid. Who in their right mind would use a legendary item together with grass and wood armor? Seriously?
Quite a few aspect of this game stinks now.

Further, as you now level up with inferior weapons and equipment, the zombies become more powerful while you're stuck in the stone age. All loot are of inferior quality unless you put your scant points in looting, so yeah, I don't like this game any longer. I'd rather dig without any zombies henceforth.
Loot man, just hit POIs, live dangerously for a bit, zombies only bite if you let them.
You only need legendary parts for tier 6 stuff, I will let you know now that there is little difference between a level 5 stone axe and a level 6 stone axe, so just save them up for later.
At this point, I think you're trolling for points.
so play a previous stable and never need to play with the current direction. 16.4 stable exists.

I believe Red Faction 2 (2002) has plenty of pointless underground tunnelling, or modern-ish era, Minecraft.
