I started a new game and looted just about everything i saw at my spawnpoint. got some wood and made 2 chests that i put down. In one of them i put a stone, the other i just open and closed to make sure it was empty and that i did the exact same thing with both chests except leaving an item in one.
I did the same thing with 2 cars just to test them as well.
After that i ran far away all the time looting what i came across. i stopped in a camp, looted everything in it and sat inside a tent for 4 days (loot option was 3 days).
I checked the containers in the camp on day 5 (4 days after i arrived), nothing in any of them even tho i never opened any of them to check during those 4 days. So just by being close to them i stopped loot from respawning.
I ran back the same path i took to get to the camp checking the containers along the way, all of them had new loot except for the cars. the loot-timer was in place for all containers as well, but not for the cars.
When i got back to the starting point i checked everything again and found that the car with the item in it had kept the item, same with the crafted chest. neither had loot-timer.
The crafted chest had a loot timer and a cobweb in it, it could be randomly generated loot or it could be a source for neverending cobweb ;-)
to sum it up:
Loot in containers are safe, but no new loot will spawn in containers with items in them.
Containers without loot will have new loot if there have not been a player around them for the duration of the respawn setting. (how far away you have to be is unknown)
Cars are not considered containers so they will not have new loot in them.
I believe the timer resets just by being in a close enough proximity, not based on opening the container. And, as geir-o-n stated the distance to a container which allows respawn is unknown.

I've also noticed that while away for 12 days (7 till reset) when I went back things still said "Empty", I opened those anyways, and found loot in over 75% of them.
The distance is probably related to player's render distance. Servers only load map information within your render distance. So i'm guessing if you are far away that the server will unload the map data from the player, then it will give the server the chance to respawn loot.
This could be a problem if someone decides to camp in the middle of a town or if there are players constantly passing by the towns.
cars not considered containers sux as well, once looted no more loot, this needs to be changed
So if you do not have time to totally clean things out at least open the containers so when or if you come back you can clean out both sets of loot , the old and new.
On MP it is just good to totally empty them because a lot of folks still do not realize that if they take the 1 tin can out the container it will instantly refill if you close and then wait a sec and open again if the respawn timer has passed.
i went into a town, looted alot of ♥♥♥♥. set days to last only 10 minutes, stood in one tiny room/house in the dessert, and waited 50 minutes.
i didn't leave the area, but i didn't loot or do anything other than eat and walk around like a 2 block radious.
the results were, everything in the tiny 4 by 4 room were not refreshed, but the trashbag outside roughly 10-15 blocks away from my locations had new loot in it.
Using 'settime' command allows for loot respawn, meaning the respawn system is linked to the game timer, not real time. This makes testing a whole lot easier.
All world-generated containers tested had their loot respawn (including sedans). Player-placed containers (even ones available through world-generation) do not. Containers themselves do not respawn either.
*If you want to be able to re-loot keep your world-generated containers intact! You won't be getting any new loot sources unless you travel somewhere new!
The respawn timer reset is based off of distance, not access. The distance in question is 6-7 block between yourself and the object. The distance does not appear to be related to chunks or render distance in any way.
* Build the edge of your base at least 7 blocks away from any container you want to reloot.
* Repeatedly visiting an area will cause the nodes not to respawn.
The timer is roughly hourly.
* If you get within 6 block of a container on Day 1, Hour 5, Minute 0-59, with a respawn of 5 days, you can next loot the container on Day 6, Hour 5, Minute 0.
* If it is not yet time to loot the container, stay roughly 3-4 car lengths away from it and it should be fine.
IN SUMMARY, STAY OUT OF TOWN OR SHOP PARKING LOTS FOR WHATEVER THE RESPAWN TIMER IS AND ALL THE WORLD-GENERATED CONTAINERS SHOULD RESPAWN THEIR LOOT. NO NEED TO BUILD YOUR BASE A KILOMETER AWAY.
someone said if you leave an item in the container, then the timer won't reset when you get near it. could you confirm this please?
