Also note that some sleeper volumes have a trigger to wake them, so it really doesn't matter how sneaky you are.

Sorry then. I stated that my english it's not so good. I got confused with the terms sneak and stealth.
I know they are not the same but I thought that if you are able to sneak, you have to stealth.
Well, it doesn't matter. I was trying to find a way to play the game without a gun or the sledgehammer or clubs...

I find it easier just waking up as many as possible and killing them. Is there a reason why you would avoid killing zombies?
I don't like that way. It's the same as clubs or sledgehammers. To be honest I've never tried it but at the end I suppose it's the same because with two or 3 hits, they are down (maybe less).
I play in nightmare mode with nightmare settings on the zeds. But once you are in day 70 or so, there is no more challenge.

I always used the technique you have said. But it's not funny to me at this moment. I was trying to play the game in other way.
Hope I could explain correctly what I want to say.
Being undetected 100% of the time is different than having perfect skills and quiet armor and mods. For example, there are little piles of trash on the floor in most poi's. If you step on one it makes noise and wakes up things nearby.
Most actions a player can take make a little noise. Loading and drawing a bow makes noise. If you close to a sleeper when you do that, it will wake him up, regardless of your skills and light armor.
So the answer is - in addition to having maxed skills, perfect light armor, and armor mods, it also helps a lot to be very careful where you step and what you do.
In POIs there are defined zones for sleepers to spawn. For example hospital helipad: i.imgur.com/Ei7Uy8i.png (btw we can see it's wrongly defined here - player can shoot spawned zombies without waking them up)
In default settings they will wake up on some "noise", but sometimes they are set to attack instantly when player will enter that defined zone.
Also you can read a bit about how stealth works in Config/Stealth.txt (except smell parts that are outdated)
Currently there is funny exploit if you want to mess a bit with "sneaking" - get full set of padded armor and put advanced muffed connectors on it, you will go negative noise so you can "stealth" with M60 and also check how things work with visibility.

And exploits aside, padded is what stealth character should use anyway. Later on with better skills and mods switching to military armor.
Cloth armor (later military), maxed out Light Armor, Strike and Shadows skills, using a crossbow (modded compound bow and steel arrows preferred). Also points in Parkour and having the few books that provide bonuses to reduce or eliminate various armor penalties can be super helpful.
But, in the end, it's very difficult to achieve the "no guns" desire. I always level up pistol, it's right in the Agility pool you are already putting points into, and a good modded pistol with the silencer is invaluable at helping to survive those situations where the sleepers in rooms are automatically triggered, or heavy enemies that don't go down after a headshot (or you just plain miss the headshot). I can survive later blood moons with a pistol as primary weapon, but usually die spectacularly trying to survive it with just a crossbow. The birds alone make it worth keeping the pistol handy to knock them out of the sky.
