If you mean "scrap" then there is a scrap option next to the inventory window if the item can be scrapped.
As for guns, I'm almost certain that disassembling them requires reading the Schematic for that particular gun first. I should point out that I'm not entirely certain about this. But I'm saving the crappy guns I want to break apart because there is ammo to be had when disassembling (and then scrap the individual parts). If you scrap the gun without disassembling first, you'll lose the ammo.
