"Canon zombie lore"?
Seriously?
There's no "canon" zombie lore when there's so many variations.
I bet you were one of those guys that freaked out and said Skyrims dragons "weren't real dragons but wyverns".
You can have some common consensus for fantasy creatures (elves have pointy ears, orcs have green skin, dragons breath fire), but there's no canon for them.
On that note, Dead Islands zombies cannot breathe underwater, they slowly take damage while they're submerged.
Female player characters need it too.
But seriously, if the zombie is a dead zombie, do not need to breath. If the zombie is the infected type it need to breath.
So, what type is the 7dtd zombie?
2. Zombies strong arms cannot hit things forever and do more damage than a pickaxe

Great minds 'n' all that...
Unless they're more like the infected type, of course.
Infected is... well, just people with serious self-control issues.
