Basically, night time will always start at 22:00 game time. How long it will be until day time starts ago will be dependent on how long your days are. If you are using the default 16 hours days, that means that night will start at 22:00 and end at 06:00 game time.
Music plays both when night time begins and zombies run (howling sound) and when day time begins (calm sound). If you're doing something at the time, both can easily be missed since they aren't that loud and certain other actions like opening forges and doors can drown that sound out.
