The game has more shiny shadows, lighting, reflections and a lot of various new and redesigned POI's and if you can manage mostly High or better settings it'll look "fine". EDIT: except shadows - they tank fps for many lately, having them low helps. But it's never going to overall look that much different - eg, it's voxels, certain kind of look, not 3d model shiny AAA type visuals.
The more important factor re: PC would be ... mods (from others or doing some tweaking on your own).
The -new- console versions and PC all run parallel to one another as 1.0 now (A22)
The last alpha on PC was a21 with many news things (but not really super extraordinary) compare to the old console version but the base gameplay itself it's the same, quality graphic is better...
The v1.0 PC is the same of a21 at +90%... & in more, with some same bugs... xDDD
But the best question is more can you play on a PC or not ?
Or do you prefer play on a console ?
For me, 7DTD is not good for console & I talk only for the type of the game itself...
After that, most of players prefer to play on PC because we can/use mod & use the community's prefabs...
Note that console version will receive the updates after some week/month after the PC version...
PC version game me alot of settings to select from on world creation while xbox only prompted me to use their default or random, i chose random as a good comparison to what i just created on PC.
PC said it was still pre-release upon running it, xbox did not
On xbox i was presented with the same generic looking map i could wander miles on and just see a few buildings here and there, i wound up in what looked like a baby town with a gas station. the horizon view was crap, half of the buildings were spawning in before the other half (of the same building) only a block away. I did not experience weird lighting issues. i felt like i was playing the same game i remember many years ago. there were zombies and i did run into a few large bees other than that nothing but harmless wildlife
On PC, i started walking up the road on familiar areas as xbox but building were spawning in as they should and further away, i saw a city in the horizon way off in the distance and as a approached it the lighting changed (albeit glitchy) but i got a different feel. The small things like tires on the road were what were sometimes spawning in right as i walked by them, the trees also sometimes jittered and changed their looks. I was notified of the danger level on each area i entered with skulls. i was in 3 biomes it appears, the one i started in just woodsy regular type like the xbox always had then hit a burned up area of the forest and went further and found a desert, i found more zombie types as well. apparently i was in (start biome, wasteland, and desert). i saw regular zombies, mutated ones with green ooze, zombie dogs, zombie flying birds, large bears etc.
maybe it was just the luck of the random generation, but i did feel the PC version had more depth. xbox version appeared to be a little more stable but running pathetically below the consoles ability, the PC seemed to have a lot more stuff but had some funny issues
are you saying the XBOX "full release" is not out yet? I thought they both were supposed to come out a few weeks ago

The old 2016 console version didn't have any danger-level-skulls in the HUD for places/buildings...that's only in the current console version.
It sounds like you're playing the old version, but it's hard to tell from these conflicting facts...which means I'm probably misunderstanding something or maybe you typo'd something?
The new console version needs to be bought (around $45) if you haven't already bought it...and it's only been for sale for about 2-3weeks. Anything you bought earlier was the old version.
If you just reinstalled, you're almost definitely playing the old version.

Console doesn't currently have crossplay with PC nor does it have RandomGeneration for maps which planned to be added with a later update (it comes with Navezgane and a few pre-generated maps).
It also sounds like only the more major updates will happen, so it WILL be caught-up to most of the PC aspects (aside from modding) but it'll happen in bigger/slower yearly chunks compared to the regular monthly/weekly updates PC gets.
EDIT: also looks like console will currently be limited to singleplayer and 2/3/4player hosted MP...with a future update hopefully adding dedicated server support and larger player-counts.
you are right, on xbox 2 versions of the game exist (i assume one will be removed) the one that has existed forever and the new "preview" which is basically the same as console. i think that player count is also limited. we only do 2 on a private server.
What i find odd is that the game basically only lets you have 2 navezgane? saves as it has a memory restriction that doesnt make alot of sense, there are other preset "randoms" but i dont think there is random generation from what i can tell in the world menu
