How should it be?
Nothing about this game is realistic. You can't sleep because there isn't a point to do so. Why? There is no penalty for not doing so. Can't see? Turn up brightness until you can get a flashlight mod for your gun or a headlight mod for your armor piece.
In my game, I disabled red moon nights. It still have zombies but not much.
I play alone. An option with specific conditions at least would be possible.
Still no point in a sleeping mechanic where there isn't a penalty of some sort for not sleeping. Again, turn up your brightness in the settings if you are having that many problems seeing. Doesn't matter if you have blood moons turned off. There is still no reason to want to sleep the night because you can't handle the dark.
I know that is not "roleplaying", but I mean if you're mostly not going to do much at night but "wait around" and be annoyed from the waiting around, why not.
I think if you're in debug mode if you hit ESC there's a slider to speed up day-passing time, so you wouldn't have to exit save first. Just don't use the slider to change what day/go back in time, messing with that one can cause problems I hear.
Not only Valheim. Enshrouded, Minecraft, and Sunkenland are games that I've played recently that allow you to sleep. I can understand why a large 7 Days to Die would not have that function, or would disable it if the game had one, but if you are solo or playing with a small group of players who are all working together they could make good use of a sleep system. It's something TFP could have added but they've been ripping out most of the actual survival elements and dumbing down the ones they haven't been strait up removing so I doubt they would ever add sleeping - and especially not a requirement to sleep.
And nights are designed to be more dangerous than days by default settings.
IMO, sleeping would bypass the danger of being attacked by running zombies while you're in a precarious situation, like in a random POI or in the wilds. I don't think it fits with the dev's vision.
Modders will probably make this available for solo if you need it.

It's like finding jars of water in toilet or reading books to learn how to cook an egg : this a game for happy killing zombies and happy building anything any way, without the slightest notion of realism nor survival. A simplistic game for simplistic fun...
