As for seeing the remaining mob hp, that probably isnt going to happen; You're better off to find a mod for it.
Zombie health bars are a common thing added by the big mods. But probably won't be in vanilla ever. I think they used to be there long ago but were removed?
There used to be properly visible food and water bars in vanilla, but they were removed for some reason a couple of alphas back.
Go into "\7 Days to Die\Data\Config\XUi\windows.xml"
Ctrl + F and search for "windowTargetBar" (There should only be one result, which is "<window name="windowTargetBar" controller="TargetBar" visibility="godmode">")
Change the "godmode" to "always" and don't forget to save!
( like this since they added the HP bar in the game few years ago )
