try launching it as admin
if that works try giving the game proper permissions and/or change the directory
some of the files are installed in your user folder by default
C:\Users\"username"\AppData\Roaming\7DaysToDie
it's settings, logs, saves etc there. the error sounds to me that the game does not have access to write the needed files in the Roaming folder
one fix would be giving 7days proper access to said folder
other fix would be changing location for that folder somewhere in your config. give me a few minutes to see if I can find a config and the line that specifies that.
if you don't want to go through fixing the permissions you can change the file location for those other files
In your 7 days to Die folder you will find the file "serverconfig"
open with notepad
find <!-- Folder and file locations -->
change absolutepath to the path you want it to go
<!-- <property name="UserDataFolder" value="absolute path" />
<!-- <property name="SaveGameFolder" value="absolute path" />
that should fix it

it's in the previous folder just named "7 Days To Die". the file is "serverconfig.xml"
but it's also very odd that you only have the outputlogs. there are so many files missing
Sorry i know this is from forever ago. How do i give 7 days proper access? I think I'm in the same situation.
I've done this forever ago BUT if I recall correctly you navigate to the .exe go to properties, then security and then you need to find the proper read and write access and check if it has it for your current user, but before you do that try opening it as admin. see if it solves the error. if it does then it's just the missing permissions.
if it does not it's something more funky or the drive it's trying to save to is full.
