Within the first week, I met my share of bears and wolves wandering around in the snow biome. Wolves, dogs, and dire wolves are primarily wandering around, rather than sleeping. I met one zombie dog that was sleeping in the 3 in-game weeks. The boars are a mix bag. Half of them are sleeping and the other half are wandering around the city. I rarely see deer actually, in any biome.
On a daily basis, whether that be in the pine forest, snow biome, or desert biome, I see a lot of night spawns.
Mind you, I play on Insane difficulty with custom settings.
By that logic, every single zombie game is a rip off of each other at the time of their development. What was the first zombie game? Every game thereafter is a ripoff of the original zombie game? Give me a break. The only thing lacking in this game is its completion date. Everything else people have been complaining about like no jars after drinking water and the magazine system can easily be modded out.
Besides Plants Versus Zombies, almost every zombie survival game contains guns, a trigger-based spawning system, and the ability to make building pieces. Wow, so unique right?! ;)

Now I suggest you try one of the overhaul mods like War of the Walkers, End Z, Darkness Falls, or whatever floats your boat. It can make your 7DTD experience quite a bit different. I like Darkness Falls and War of the Walkers.

I like sleeping or hibernating stuff as I usually play a sneaky character. Sneaking in to a position to stealth kill something is fun.
Still worth the money for me because the game make fun to play.
It's also worth noting that the only change to spawning from A20 to A21 was adding a separate line in code named "WildGameForestNight" which has a default max count of 1 animal. All of the other biomes had no change at all. So maybe you experienced this at night in the Pine Forest biome more than others? Which would make sense.
A20:
However, I do see a problem here. There's also a hard limit to how many entities (zombies/animals) can be spawned in at once and this type of approach creates it's own dilemma within itself. Open up the spawn limit and problem solved. More zombies, more animals.
But they wont do that because they're so concerned with console players right now and so PC players are taking a backseat. Despite how much we have been supporting them.
Consoles hardware are far behind PC technology and the companies (Sony/Microsoft) proprietary firmware and hard stance on releasing certain data for other companies (like TFP) make it harder to develop a game through them.
But hey, it's a company, right.
You could say the entire game in general has been a 'rip-off' of other games from the start then. Especially since the idea of the game was inspired from the Skyrim and Fallout series and the owners have been very open about it.
