Yeah...
The only time I was able to cancel scrapping anything was when it was something really 'beefy', and I wasn't really doing anything else at the time, or if I had a very stacked queue of things I was already scrapping... That being said, and I really feel the OP's pain... But that's just how it goes. Where would it end? Oh, I walked through the door and a zombie hit me... I think I need to hit the 'go back 5 seconds' button.
I call this: pocket scrap recall.
Don't get into so much of a rush that you stop paying attention to what you're doing. That's like someone eating glass accidentally by pressing the W key instead D when trying to drop it.
Live with your mistakes and learn from it on your next playthrough. That's part of the game.
If you get something you absolutely want to avoid scrapping just drop any available mod on it, even if it doesn't help. That is an easy enough work around for me being careless and doesn't require any additional development.
