The only game I have played where I struggled to see in the dark... In the middle of the day. While outside... You know your lighting is bad when Minecraft does it better.
I have tried bloody everything mate
Try the solution marked as the answer in this thread:

I did that and since then the lighting was completely normal in all buildings for me.
sorry i couldn`t be much help with helping you to solve it, and to be honest i haven`t changed the setting for dynamic reflections and was hoping that it might have helped fix it :(
This didn't work for me sadly :(

Ah that is a shame :(
I like having a nessesity for torches and lighting.
Can you check that file you changed to see if it's still changed or if it's back at the default setting?
Rightclick 7Days in your Steam Library and select Properties, Installed Files..then select "Browse" near the top/right. In the folder you'll doubleclick "Data"(not 7DaysToDie_Data, the one beneath that one), then doubleclick Config, then scroll down to "worldglobal.XML" and right-click and Open With "NotePad".
About 3/4 of the way down you'll see:
<property name="ambientInsideSkyScale" value=".2, .4"/>
You can just change the .2 to a .8 (or something higher like 1.1) then close and save.
(so it becomes: <property name="ambientInsideSkyScale" value=".8, .4"/> )
The next time you open the game, your building insides shouldn't get noticeably darker anymore. If you use 1.1 or higher, building insides will get a little brighter (like your eyes adjusting to the dark).
It's still at .8, but nothing seems to have changed, unfortunately. I'm glad it's working for others though.
I know some people find it fun to try to play a game that makes it impossible for them to see the gameworld, but I don't. The jarring nature of going from bright sunlight to pitch black in a step because there's a ceiling when there are also windows, an open door and gaping holes in the walls just makes it worse.
It's been really easy to get the burning shaft mod though. That kind of nullifies the issue indoors.
I understand the hesitation though.
I CAN SEE INSIDE.
Take three steps past the door? Pitch black.
I thought for a second my monitor had gone to crap.
