If you haven't noticed there is a full year between 2 alphas - plenty of time to get bored with it many times over.
Nothing!...... except that a new Alpha (major release like A20 to A21) will break your current game save (98% of the time) so, you may not want Steam to 'automatically' keep updating your game version. This is why it's important to open the 7d2d 'properties' and in the 'Beta's tab, select the version you want to be playing at the time......currently A20.6 Stable--unless you're playing an older version.
To get into 7d2d properties..... R-click 7d2d in steam library and choose 'properties.'
Autoupdating has its plus points, but it's not great for a game that's in perpetual alpha and which usually breaks save games with each non-trivial update.
EDIT: To answer your original question there is no sign that 7DTD will ever enter beta let alone leave it. It's been in alpha for 10 years so far. The devs obviously like having it in alpha.
Copy the whole 7 Days To Die folder from "...\steamapps\common" to any other location and you're good to go, that copy won't ever be updated by steam.
It's shame that this game has been in Alpha for so long. Eventually people will lose interest or other games may leap ahead.
Don't get me wrong, I LOVE the game, but I would like to see some real progress in story line or maybe even graphics (though that's not as important IMO).
