Fortunately it's very easy to mod zombies back into the game! I'm not at my computer to look at the code but I know Khaine has a modlet called something like Dangerous Cities that increases the zombie spawn count in cities while reducing it in the wilderness. Just pop in that modlet and modify the file in a text editor to put new numbers. They're pretty clearly labeled so with no expertise you could go in and change the values easily. If you need guidance I can tell you the exact code to change later.
And don't hold back! Increasing the numbers by 30% won't even be that noticeable. If you literally quadruple the number of zombies allowed alive at one time and cut the respawn time down by 85% then you're going to start seeing some real zombie situations.
For what you want you need to play Project Zomboid. No problem at all there. Way harder, way deeper game mechanics and always permadeath though (the world still exists, also everything you build, you just start again with a brand new character). Still a lot of fun as you can have 500 zombies chasing you at once.
