C:\Users\name\AppData\Roaming\7DaysToDieAppData - is that address right?
I have up to >7DaysToDie and in that folder there is just Saves and SavesLocal folders but nothing else. 7DaysToDieAppData does not exist. Am I looking in the right place for the local cache files?

What are you trying to find/do? With that information we may be able to answer more clearly.

If you are looking for the game files themselves:
Steam Client > Games Library > Right-Click 7 Days To Die > Properties > Local Files Tab > Browse Local Files.

Sorry I should have described myself better. My game keeps crashing at the start and TFP said:

'For those who have reported crashes please try cleaning out your files in your C:\Users\name\AppData\Roaming\7DaysToDieAppData folder' and I was just trying to see if I was looking in the right place. Cleaning out I guess means delete.

correct. Personally I recommend the following as a more thorough answer:
Deleting Saved Games and Old Save Folders
Clearing the Registry on Windows

It's a hidden folder by default. Need to make hidden folders/files be viewable. Or use the direct % command method noted in the first link Red Eagle posted, if you don't want to make everything non-hidden.

Thanks for all the info. I just tried all the things you said but it is crashing the same way as before.

I already have the folders showing everything - unhidden - but thanks for the tip.
