If you want the cowards way out i think you can turn empty jars into broken glass and eat it... i think, I have never tested that.
I never understood why it was even considered as an option in the game.
To the OP, if you dug too deep and didn't bring ladders, if your digging equipment still has enough condition, you can always continue to dig, but on a 45 degree angle upwards to eventually get back out.
But if your shovel/pickaxe/stone hatchet is broken, low in condition or you don't have anything left to repair them, you're kind of screwed. Fire off a weapon a few times to attract some zombies to your location and just wait.... or eat glass.... or drop a pipebomb at your feet..... or make some barbed wire or a wooden spike, set it by your feet and walk into it a few times.
This is why I always dig/mine on an angle so I don't have to use ladders and can just walk in and out.
The glass was the in game subtitute, rather than having a metagame option.
