Report a translation problem
At the moment I'm playing a game where I dont have any traders and some mod that forces cities in my world, so there's more cities than normal. Same thing that JaWoodle is doing right now with his series.
Usually I start off with Warrior difficulty and Jog on everything just to get my character built, when I feel like it's too easy I turn Jog to Run, then Warrior to Survivalist then Run to Sprint, to Feral Sense etc, I use a mod that make those random Wondering Hordes spawn 4 to 8 times as many, they'll be like 20 Coyotes or 9 Zombie Dogs or like 30 regular Zombies. When that happens at any moment and even everything is running/sprint during the daytime. It always keeps me on my toes.
The idea of late game should be coming, at least a story that has an ending but most importantly they're going to have Workshop which should add more end-game content. There is a website right now that has some pretty good mods for more content but there's no API so it's made by a bunch of nerds and very few of those people are actually creative and not just number crunchers if you know what i mean... Hopefully they make an API that gives us all access to every piece of data of their game for Mod making and we'll see some incredibly insane overhaul mods that'll extend the greatness of the game at least 8 times, as the many games that have that can do.
Have you tried Darkness Falls mod? It has an ending and has a lot more content.
You still get thunder at 6pm, so its not to much of a hassle as you just need to be prepared.
Always run zombies daytime is manageable too and can try always jog first to see that that is fairly easy too.
Can't really go without traders as the stock some hard to find items.
eg: if you want to be building steel early your need a trader for early crucible.
But you can find a map with traders more spread out
eg: my current map has no 2 traders closer than 2km away.
loot respawn turned off, supply drops or just the marker turned off
insane difficulty... 64x horde night zombies.... permadeath... are the other settings i play with.
And you sister gets to punch you in the nuts if your die.
Darkness Falls as already suggested above, pretty much gives you what you are looking for. The last tier of gear unlocks with level 125 with the last perk there beeing unlocked at level 175.
It has more and harder enemies, the hordenights are brutal and the wasteland is a no go until you get anti radiation protection going. Oh and first aid is way less effective.
@OP....normally by the time players get to 'end game' and it's too easy, they start over. But, that's the beauty of 7d2d...you can alter every setting there is to make it as complicated as you want or as easy as pie. And, there's great mods that add a lot of challenge....as was mentioned....Darkness Falls.....and another--Undead Legacies....a few others too.

I definitely could of min/maxed the trader by exploiting certain items to get the most out of him, but I’m not about the exploits.

Complains about game being too easy yet plays on easy warrior difficulty and slow as molasses jog speed. At least you have feral sense on. (scratches head) Like others have said just change settings. For example I play with 100% random horde nights with no warning and everything cranked up but I do mean everything. Loot is at 200% to give more loot. Still not that brave to do normal loot or worse on insane everything.
The random horde is horde every night with up to a week of randomness. With no warning other than the in game lightning and red sky it can be pretty tense in buildings. Is that a random storm I hear or is it an incoming horde?

theres plenty of options to make the game harder
But yeah, I admit trader's rewards are pretty crazy, they can sometimes give you tier 6 items just for finishing a tier 3 POI ...
