You can do a few things;
1 - Go into the 7 Days to Die folder, locate the EAC(EasyAntiCheat) folder, and install that crap. For some people, Steam doesn't properly install EAC when it downloads and installs the actual game (happened to me once).
2 - If EAC is installed - or if you installed it as mentioned in #1... and it still doesn't work; go into that same folder - and launch the game from the 7DaystoDie_EAC.exe as an Admin. Do not use Steam.
3 - If those do not work; try launching the .exe file that doesn't have the _EAC.exe at the end, as Admin still.
3a - You can also launch the game from Steam, select to launch the Game Launcher and disable EAC from there.
Normally - one of those should work - if not - come back with output logs and anything you feel might be relevant.
Fully delet your game and EAC, then do a clean install. There's no reason why what Pat suggested should not work.
Then go to the bug section of the forum, and read the pinned thread called "How-to report an issue!". From there start with a report (as outlined in that thread) where we can garner enough info, to do more than guess at what part of Pat's solution you did wrong.
