Try mining up north,I found a lot of coal mining the snow biome but no nitrate and the desert came up bust as well.
Where did you find all your nitrate?
I've found a lot of it all over the forest biome. Pretty much all I do when I set up shop is scout the nearby underground veins. Drop a flag, dig 1 gravel to check what it is, place marker. Drop flag at the next location, dig 1 gravel to check, place marker, etc, etc.
I've done this all over the snow and burnt biomes and have yet to find any coal veins, sadly :\
Other than the ones up on the ground anyway.
It'd be kind of cool if ammo you bought from the traders was modern surplus stuff, and your own self-crafted ammo was black powder, causing malfunctions, and creating huge clouds of smoke after any kind of sustained firing :D
That would be pretty awesome. It would also add a nice new level of difficulty for early/mid game, or even late if you have only 1-2 traders to deal with.
You cannot make coal by burning wood, and you cannot use charcoal for all the stuff in the game that we currently use coal for.

I get that glass is the easiest thing in the world to get a ridiculous amount of. But it just makes absolutely no sense to throw away a glass jar after using the water inside of it when you're in a zombie apocalypse...
