hitting "assemble" removes the ammo.
Your girlfriend - maybe, TFP for shure. My won't need a schematic to do so. For a not known gun you will need some time - but guns are easy stuff - if you take your time.
To built a forge - science, I don't know how to make it in real that it can smelt iron. From steel I even won't talk.
To produce a knife out of a forge - science.
To built a bike, a generator, ... for many stuff you need a book, a "perk" or whatever. But for guns?? Please remove it.
10mm is out in A16. MP5 is using 9mm now.
Dismantling would be cool.
Nothing should need a book. Man kind has invented everything we see today with what we call "time".
The system would make more sense if we simply learned something after spending "xx:xx" time with any component that available in game.
But then you'd need to find a balance with the time required to "learn" something in order to cater to all types of people.

That wouldn't be easy - and "gating" this behind options in the in-game menu, would clutter it beyond belief. Gating the assembly of weapon behind books, ensure everyone has an equal chance of finding them and being able to then better make use of the weapons.
Of course, everyone having an equal chance - is all related to the RNG god, but still... it's far less "punishing" for those who play only but a few hours here and there, compared to the over-achievers who will spend the required xxxx amount of time needed to craft, dismantle and re-assemble every gun there is.
