So if you are getting stones and sand and a small amount of lead from the gravel, stop digging and find another gravel patch until you find one that gives you stones and sand and a small amount of iron, THEN dig for real.
In the past I've found it easy finding tons of iron and never needed more than one mine to meet my needs. Maybe we both just got unlucky or something has changed and long winding veins don't exist everywhere anymore.

The gravel on the surface is only an indicator of the near surface deposits. Ore deeper down is more randomly dispersed, and from all I can tell quite a bit rarer(which is quite fair, since it's also far safer to be deep underground).
And yes, the new trick for A16 of the gravel above hinting at what's below is super helpful.
But yes, veins do show up at lower depths, they are just less frequent and don't have the handy surface indicator.
