Do dedicated servers pause the in-game time when empty?
This would be super useful to know. Friends and I are considering getting a dedi instead of hosting locally.

Yes they do, in most case after 5minutes

Yes. If everyone logs out on Day 6 @ 22:15, it'll stay there until the next time someone logs on. The only things that keep going regardless, are timers on Forges, Campfires, Workbenches, etc... meaning they'll burn what wood they have or craft what needs crafted regardless if people are online or not.
