Get more carry capacity?
I noticed in the new update my inventory has been effectively more than halfed, if I use the extra slots my character becomes "over-encumbered" and moves so slow he can't do anything. If I don't use those slots my character can't carry enough to be effective in doing anything. Is there any solution? craftable backpacks perhaps? Or is there a setting I can turn off to fix this? I used to play this a long time ago and it didn't used to be this way.

As you level up you can allocate stat points into unlocking more inventory space. There are also armour mods you can find that increase carry weight too.

there is a skill which increase your slots without being overencumbered, its under strength. Just explore the game and you will find it.

I start putting points into the Pack Mule perk right away, I focus on Strength in the early game (for Pack Mule and Sex Rex), putting just enough points into Intellect to get the forge. I'm also way more selective about what I loot than I was in A16. Until I have more slots unlocked, I only take what I can use immediately.

If you absolutely can't stand the new carrying limit (I hated it at first, and it took me a few games to adjust), there are game mods that remove the limit and/or add extra carry slots.

I suggest a backpack mod. I use one that extends the slots to 120, but there are bigger ones out there. Easy and simple to use - just copy & paste.

The one I'm using is the "Simple UI Bigger Backpack120" modlet. I think I got it from the 7daystodie forum, but it needed a minor change in the xml file in order to display all 120 slots properly. You can also get it from Nexusmods.
