Pretty certain chickens and rabbits are removed from the game entirely.
Chickens and rabbits are still in the game but they are harder to spot and I find more dead chickens next to cacti than I do live ones :)
There are multiple ways to get food...as XistenZ mentioned scavenging and farming (the latter being more convenient and sustainable) are alternatives to meat.
As for hunting, explore new areas. Animal spawns are on timers for each loaded chunk. So if you missed the chicken or rabbit it may seem like there are no animals...just move into a new area. Deer and boar are everwhere...even wolves are quite common. Also the plains and snow biomes can make it easier to spot the animals.
