Ill look up messing with the xml file, thanks!
(I would recommend Notepad++, It's free)
then you need to find and edit the entityclasses.xml in the 7daystodie>data>config folder
then search through the file for zombie entities for the line containing;
<property name="MaxHealth" value="xxx"/>
change it's value to anything lower than the original one, to make them "squishier".
(notepad++ has an excellent search feature)
If you have lowered their health, at that point you might as well just play zombie off mode because you will be cleaving them with no effort or risk.
it gets too hard, too fast
Easy solution: When you first start.. avoid contact with zeds... collect basic resources .. build some ladders up a tree and make a small tree fort (hunters platform) to set up your camp. Usually, if the hordes come by.. you can go into stealth mode and they won't be aware of your presence.. just avoid tthem till you build up resources / supplies.. an try only taking on one zed at a time till you get hang of it. Sure, you'll die.. it happens.. but, at least you'll have a safe place to spawn.
