If you only want it to run while you are logged in, simply start new and use the multiplayer option when starting the game. Anyone can join you. This is best for coop or small play groups that want to level up together
Alternately for your own dedicated server, look:
https://developer.valvesoftware.com/wiki/7_Days_to_Die_Dedicated_Server
The only benefit is that it can be available for other people to play even while you aren't playing the game yourself
The drawback is you need to leave your computer running 24/7, anyone logged into the server can make the days go by (so you might come back and 100 days have passed without you), and of course, how good is your home internet connection?
If you don't have a good enough internet connection thtat will allow many people to connect to you with a good ping, and don't plan on leaving your comptuer on 24/7 just start the game as multiplayer instead of as a dedicated server

Not an official server, but Its a clean install OS with nothing but the server files.
I hosted the ValdMod server files on my server for 2 weeks. Performance was great. My sertver wasnt the most popular so it never seen morew than 12 people at once, was set for up to 32 players.
I would auto restart it every 8 hours.
My advise.
Have a fast internet connection. I have 120 down and 40 up. You want upload speed.
I suggest you have a SSD drive over an Sata, for the speed would be helpful.
The forums have some really good advise over on https://7daystodie.com/forums
