However, there are mods to give you good AI enemies. The most popular, and quite a good one, is the Modular Encounters System. That's actually a platform engine that makes good AI enemies possible and there are lot of mods that use it to create NPC encounters of various difficulty. You can mix and match these to suit your taste and difficulty preferences.

Adding a mod is very easy. Just subscribe in the workshop and the mod will show up in the game setup screen under "mods". Just choose which mods you want to include in your game and that's it.
I run them in my games, among some quality of life mods and some cosmetic mods.

I get what you are saying about playing on servers.
There are a few good ones out there where everyone is there to have fun with each other and achieve a common goal, but a lot that I've seen have owner/admins who have a serious 'God complex' and seem to delight in making life miserable for people that they don't know or like.
I generally host a game that's open to my friends, should they wish to join me, and sometimes they do, but I also spend a lot of time playing solo, and that's why I too use several AI mods.
That said, here is a bit of what is in at the moment for you to see a bit of what we can add or remove in the world we create :
> Premade in-game scenarios, those have tasks to complete / Short story worlds.
> Premade easy start worlds with enemy SPRT stations to conquer on all planets.
> Encounters (in space, abandoned stations/ship protected by enemy Drones)
> Enemy Drones.
> Cargoships.
> Wolves on Earth like planet.
> Spiders on Alien planets and Pertam planet.
> Weather that adds : easy, medium and hard areas to survive.
> Economy that adds missions like to do at the contracts block of dead NPC stations on planets and Moons/space, also buy ships with Space credits...
