I rarely use a ore detector in this game because I go play at the Rich ore spots of the game so I can have all ores very early in survival.
Rich ore spot of the game = Where all ores are close to each other.
Keep in mind there are Poor and Rich areas in this game and here is one of the Rich ore spot in space :

Here the easiest Biome on Earth like planet and I recommend to go build your first station at the Easy Biome of all planets before going at the hard ones.
The best starting place on Earth planet where we don't need a ore detector and no lightnings when playing with weather ON :

I use something a bit more sedate; this is my go-to version because I don't have to hug an asteroid to find ore.

It'a all the same GPS coords in all similar worlds so we just have to explore one time to find all the Rich ore spots and keep the GPS coords of the best ones.
The other thing you can do is use a hinge or rotor to connect a large grid ore detector to a small grid vehicle. That can let you get up and running looking for ore faster.
There is also a "spectral analysis" mod that lets you point a ship camera at an asteroid and you "read" the spectral analysis to find out what is there.
On a planet or moon, find some ice and fill your bottles then fly around 300 - 500 meters above the ground and look for patches of different shades (gray or brown) or just look for boulders. You can then mark them with GPS and drive/fly back with a vehicle.
Even with that, you can have bad luck and not find cobalt or magnesium sometimes.
There is no shame in modifying the game to make it more fun for you, so go ahead and get some mods and have fun!
Good Tip about how to respawn at another area when starting new.
Hit F5 when falling with the DropPod, that will reload the world for you to select the same DropPod and land at another area, redo till you see the best spot for your first station.

The Earth Desert where there is a ice lake is the best place to build your first respawn station on Earth.

Do the following if the F5 trick / Respawn at another area is not working, happens when playing with auto-respawn enabled :
1 - Turn Off the Survival Kit on your Drop Pod / Respawnship.
2 - Hit the Backspace key to open the respawn window.
3 - Select the same respawn ship to respawn at another area.
4 - Redo the above till you land at a ice lake, snowy Pole or at the easy Biome of the planet.
So you must explore at least one time to know where the best sopts are, or ask Veteran players to give you the best sopts if you don't want to take too much time exploring.
Using large grid ore detectors set to maximum distance is the only way to discover this stuff as some deposits are deep underground or deep within the asteroid.
Unless you're using mods. The ores are always there. You just have to be organized and thorough when searching. I label EVERY deposit with a GPS marker. I also use a spiral search pattern to find every deposit or asteroid that I can.
Edit: of course this method is for asteroid mining. If you are only interested in planet mining, good luck :) I generally avoid mining on planets because (1) the base game does not have uranium or platinum on planet surfaces (you can get modded worlds that do), and (2) it's mechanically more difficult to mine on worlds.

One thing I have been doing is add a hinge to ore detector with 3x3 head then add a battery an antenna and a connector then just pick it up and fly around. i have the antenna set to like 300m so I can drop it on the ground near by while I go mine and can still see where the deposits are. Large grid is absolutely necessary on planets since some of the better ores are 50m to 75m and unless you are in a rover or flying really low you just miss them with the small grid ore detector.
Hey thank you for getting back to me. I also saw that I can spawn a world with rich astroids which helps a lot for when we leave our planet.
This game is awesome btw. We were just raging cause sometimes you just can't find a critical ore for hours.
