Test them all, pick one, if you're not satisfied, pick multiple games from that list :D If you have a more professional system, like a wheel, pedals, and shifters, is much more recommended to try several racing simulation games, with just a controller and no plans for a wheel, is best you decide to buy one or two max, after testing some of them.
Long story short, Assetto has some of the best graphics and environment in racing simulation games, and accurate models in terms of physics, cars, tracks (laser scanned and dynamic grip levels of the surface during a race), tyres, sound (which will get an update with the FMOD sound engine for even better effects and accuracy).

iRacing will require a membership fee. There are a number of offers around. I think I renewed for $5 for 3 months.
pCARS is closed at the moment. I managed to sign up before that happened.
The GFX engine is a dinosaur but if you're willing to look past that (and the price) it has by far the most online features and it does feel like a finished product. The driving standards of people is also a thousand times better than in AC... if you don't have time for leagues and that kind of stuff it can be a VERY important point.
I only have AC since the last two days, it's a great game and the potential is obvious, but frankly I'd feel safer playing online on gran turismo... I've honestly never seen that much crap drivers in 15 years of sim racing.
Do you mean the wheel is in part turning for you? Have you turned off Speed Sensitivity?
pCARS has fantastic graphics, but it's physics are questionable at times and the tracks aren't laser scanned, giving way to inaccuracies (some glaring some minor).
rF2 has the best physics and FFB if set up correctly, but relies very heavily on the modding community, meaning there's alot of crap out there (alot of awesomeness out there too, there's just a need to hunt carefully). The graphics look pretty dated too on all but the absolute best car/track combos (which are pretty fleeting unfortunately). Out of all the sims, rF2 probably has the most potential. It's development has just been so slow that it's really struggling to become great. A lot of the fanbase from rF1 has gone over to other sims, and aren't coming back now that rF2 is really starting to get good.
iRacing has unarguably (yes unarguably, there's no competition by comparison) the best online racing experience. The tracks are laser scanned and demonstrate excellent attention to detail.
The physics and FFB can be either excellent or poor depending on the car. An example of a fantastic car to drive would be the DW12, and a terrible car to drive (because the physics are simply inaccurate, I like the demanding driving personally) would be the Ford Falcon V8 Supercar. iRacing is also very expensive from the get-go. If you invest years of time then it will actually get to a point where it pays itself off as a result of the credit system, but that's so far down the road it shouldn't be considered as a positive for a rookie. iRacing is constantly being improved in all areas, from physics to graphics (DX11 expected in the next update) to content, it's really well supported (as it should be for the money invested). I've personally been spending alot of time in iRacing lately.
Assetto Corsa does a lot of things pretty well, but none the best. It's a good all-rounder. It's got nice graphics, nice cars, laser-scanned tracks, a modding community, solid FFB. It has pretty average performance on a lot of rigs and the multiplayer is effectively terrible (both of these negatives will hopefully be cleared up as development continues, but we're talking the here and now). Assetto Corsa has certainly grown on me as development has continued, though I spend the least amount of time in it, it's still very good.
GSC is the best all-rounder and honestly if I absolutely had to choose one sim (which of course I don't, because screw fanboyism) it would be GSC 2013. It's just a nice sim experience, effectively rFactor 1 with all the tweaks that make rF1 awesome right out of the gate.
Do your research, ask around (as you're doing) and try not to limit yourself to one sim, because there's really no point. I've never understood the close-minded "THIS SIM IS THE BEST SIM BECAUSE I PLAY IT AND HAVE TO JUSTIFY THE TIME/MONEY INVESTED" attitude.
If you care only about physics and FFB yes Assetto Corsa is the best out there.
If you care about graphics,effects,animation,more cars ,more tracks get P.C.
If you care about Sound,Sense of speed,Draw distance,Blur effect,Color palette get Raceroom (the ffb is much better after the update).
These are the best sims for me because each of them are the best in something.
Rfactor 2 ... i was expecting more ,graphics are worst than a mobile game,sounds not so good,default car setups the worst, Its nothing like RF1 for me i cant see any future in this title.
Gamestock car its better and the only title that looks finished but again maybe its all around the most complete , but has nothing new to give me . It looks like moded RF1 and Race 07 i want something new to go on in the future.
Iracing.....good online , nothing else i hate the payment method ,the physics,and many more.
So if you want to something for the future A.C,P.C and R3E are the best.but all BETA
If you want something finished go on Gamestock car .But if you are an old Rfactor1 ,Race07,GTR2 player i dont think that you see or feel something diferent.
Err, that's because GameStockCar IS a GMotor game...
Also, R3E is terrible, unless you like paying $7 for a car, and $1 for a bloody skin, not to mention you have to pay in specific amounts, you can't just pay directly, so if you wanted a $7 car you'd have to buy $10 worth of currency.
Add that on to the fact that when Simbin dies, all your money is gone, and your content will be unplayable, because it's always online.
