I'll try the "turbo nutters" servers today.
the trouble you will have is you want most things you would expect from a pro server but want some things you would expect from a novice/part time/gamepad user type server (track map and forced virtual mirror the worst offenders)
an easy way to keep clear of the very special fkwits you find mostly on the banditos servers is look for servers that are running a lot of DLC content, ppl with all the DLC tend to be more serious about driving.
look for a couple of servers called 'carbon trackday' you get more mature serious drivers in there, good selection of cars and things like TC/SC forced off which keeps the keyboard users at bay plus the admin are regularly playing on the server so if anyone does start acting a bell end they are swiftly banned
This still wont guarantee you will be amongst people that know the track but they should have less collisions then the average person in an open public server. I run some servers in Australia and my Nords tourist is called "Marty's Aussie Trackday Server 5(MR AB)"
There are other MR AB nords servers around too but they wont be as populated as the fully open carnage servers. If enough good drivers look out for the MR AB servers you will end up with a much better experiance and close to what your looking for.

Minor Rating is a system installed on some servers that grade a player based on their clean laps. The cleaner your laps, the higher your rating and thusly you can become an A or B and join only MR A or B required races, this way you know everyone must be at least as clean as you.
The issue I have found with MR system is being hit by others in a way that is out of my control and then being penalised for this by being dropped down a rating- nowt I can do about 4 cars piling up in front of me with no chance of avoiding them or being hit from the rear by some noob.

The system rates you on contacts per km and how clean you can drive when close to others. There will be points for both drivers in a collision but as in iracing its almost impossible for a system to determine blame. The worse drivers will get much more contact then the better ones.
You also have the choice of picking higher rated servers to avoid having to race with those that have been rated as poor in traffic.
There are times you will have contact with not much you could do. The system isnt perfect as we cant set A only servers and to get to B is really not so hard for any reasonable driver in traffic. If we could set A only it would be close to to goo league racers only allowed in. This would also drop numbers even more as not allowing the poorer drivers in means numbers usually will be be down. I would rather run with 5 to 10 good drivers the 24 with 14 pretty poor ones.
Running in field of 30 good quality ones is great but so far Ive only had that in a league field. Some AB public server racing with 24 in has been close to league standard and much better then an open server or softer rated minorating one.
Track maps are very useful too since there's no imediate yellow flag or a blue flag at all. Mine's there just to see if/where there has been a very recent crash.
But in real life not every one is trying their best at the tourist day :P
No, no its not possible to `drive normally` with a keyboard- you can drive yes, normally? No because there is always some software traction control and stability control not found on any car to help keyboard users make it around a track.
So no- you cannot `drive normally` with keyboard- especially using keyboard digital keys for brake and throttle- no replacement for analogue axis.
