I define a forest node as the area you get enclosed in the yellow circle surrounding a hunters cabin. I generally put down a hunters cabin in the most densely forested area near where my colonists start and then place the actual building on hold. Run a straight path back to my colonists. Add a gathers hut directly opposite the hunters lodge and a foresters lodge and a herbalist nearby as well. Other than a tiny (3x3) storage area no other buildings are allowed in the forest node.
Just outside that circle (and on the path) I generally put a Woodcutter and another storage yard. In the forest nodes that contain herbalists I sometimes leave out the forester.
These forest nodes pretty much guarantee me a well fed first winter due to the productivity of the gatherers.
I never staff any of these with more than 2 workers until far enough into the game that I have plenty of idlers.

It might also be worth checking your Trade Posts to make sure you haven't accidentally moved loads of herbs to your Trade Posts to trade with.

Gatherer's hut gatherables (onions/mushrooms/etc) spawn under trees - but that don't have to be mature trees. As long as your foresters replant the cut area, there will be gatherables respawning.
If there is no forester there to replant trees, clearcutting a gatherer's area will cause you problems -The natural regrowth of trees can't keep up the demand for food, logs and herbs.
Herbalists need mature trees - so they will be seriously affected by clear cutting. Two or three foresters keeps your forest healthy and delivers what is needed.
Hunters don't care if they have trees or not. The most interesting thing is that they can only seem to get one deer every two months - there is no more productive location possible. One hunter might get 1200 venison in a year (the max). Two hunters are more likely to get the max. Three or more hunters (you can set the max to 4) are a waste of workers. ( Be sure you have a bridge if they need to shoot deer at the other side of the water. )
Oh.. before I forget, 100 logs does not mean you have 100 firewood...
I general, herb crisis means that your people are using way too many of them because their health is dropping too much. The way to rebuild your stocks in herbs and help your people get beter is usually to have a good look at their diet and fix that.
If people are not getting food from at least 3 of the 4 food groups (vegetables, grains, fruits and proteins), their health will drop faster than what they can recover with herbs, which means they'll visit the herbalist and use herbs as often as they are allowed to.
So if you are not producing enough variety of food, stalk the traders and grab the seeds or animals you need to improve your people's diet.
If you are already producing 3/4 types of food, make sure each house has access to everything. Having a market helps with that as people will grab a little bit of everything, whereas using general storage can mean people living near farms only grab veggies, and people near the lake end up eating only fish.
