View it more as a university as when children reach ten they either become adults or students.
That depends on their being a school place available, or not. If a school place is available then they become a student. If all schools are full then they become an adult (and will not go to school later, even if a place becomes available). Most students will turn into adults around age 18-22. But is dependant basically on distance between their home and their school (ie, less commute time).
Really not sure about the under 10's working. I have never experienced that.
When aging up (6 or 10 in vanilla), kids will either become students if you have a school with a teacher assigned, or will become uneducated workers.
Once a kid has turned into a worker, he'll never go to school, even if you open a school when he's still only 6 (or 10).
In the same way, if your students get kicked out of school (teacher death and no one to automatically replace him), they'll become uneducated workers and the years they already spent in school will be entirely wasted, they'll never go back to finish their education. Make sure to always have at least 1 laborer to replace the teacher from the moment you open up the school.
If I could make a suggestion.....the vanilla game is the best tutorial for this game. Banished has a pretty steep learning curve and it is important to get the basics down. The mods are great and there is a lot of fun stuff and nice buildings, etc. but they do not make the game easier. Even with the MegaMod MM8 you can still end up with your people starving to death or freezing to death or so depressed they just won't work. So give the vanilla version a try and set a goal for yourself to get one of the achievements and see what happens. Learn how to keep your people fed, clothed and housed. These three things are vital to the survival of your town.
During self-isolation, and remote working, does it really matter whether it's day or night anyway?

If you stop the school for any reason, the children leave school, and you will have all students booted from school, becoming labourers, then are considered full AI Adults, After the girls reach 16 they can have babies, boys can be fathers after aged ten.
If you unassign your Teacher during the school year, or the teacher dies during a school term, and there is no Labourer to replace the teacher immediately, then the students are expelled, and become Adults, and Labourers. And you must wait for students again.
It takes time for children to become students, They will attend school, until they have reached a predetermined by the AI time frame. This does not mean they will be considered Adults at age 18 and become Workers. It means if they are living closer to the school, then they can graduate faster. If they live further from schools, then they will graduate later. If a student moves to a new expansion, and has to walk from one district/village to another to attend school, this particular student could become very aged indeed, I have seen this happen when bringing in Nomad families in particular. Or when rearranging houses, and demolishing houses, where students housing has been displaced, and they move across the map. The still remain students, and have ended up deep into their Twenties.
On average, students who are not moved or messed with will all graduate between 16 and 19 years of age.
Once a citizen is Educated, they will become more efficient, and work at 100% capacity. The penalty behind Uneducated workers, is that they work less efficiently, and lose about 1/3rd of their production value. Consider this. A farm, with a Educated worker, can generate 500 food. And the same farm with uneducated worker, will bring in 1/3 less, effectively eliminating 167 food production from the farm. over a ten year period, that is equal to 1670. But what is more important. A farm, that is producing 500 food per year, is feeding five people consistantly. And a farm with uneducated worker, feeds only 3 people consistantly, with a small over stock available or 3.3 people per year. That is a big deal in a game that relies on feeding their people. But, exponentially, not educating your people, makes your task of surviving and Thriving in Banished much much harder.
So, put your school down, assign your teacher, and build new schools in new areas, and always keep at a minimum ONE Labourer available at all times. And the school system will work itself out within 1 to 8 years, you will begin seeing the results. And once it is ongoing, it will always be productive. The first few years are the hardest time to have a school, but also the most beneficial time as well.
